Grain-Free Granola
I don’t know why I waited so long to make homemade granola, but a new chapter of my life began a few days ago when I finally did. This one is a little spin on a typical oat-based granola and is full of healthy fats, too!
The toasty nuts and coconut (I mean, enough said), a touch of sweetness from the honey, and the warmth of the cinnamon and vanilla make it simply perfect.

Recipe makes ~3 cups
Ingredients
2 tbsp coconut oil, melted
2 tbsp honey (or maple syrup)
1 tsp vanilla extract
¼ tsp cinnamon
½ tsp salt
1 cup (160g) raw cashews
1 cup (48g) raw coconut flakes
½ cup (60g) raw slivered almonds
¼ cup (40g) raw pepitas
2 tbsp (17g) sesame seeds
Directions
Preheat the oven to 315F and line a baking sheet with parchment paper.
In a mixing bowl, add the melted coconut oil, honey, vanilla extract, cinnamon, and salt. Whisk together until the oil is evenly distributed.
Add the remainder of the ingredients and use a rubber spatula to toss until coated evenly.
Pour the mixture onto the baking sheet in one layer. Bake for 15 minutes, toss, then bake another 10 minutes.
Once done, allow it to cool for a few minutes on the baking sheet before breaking up (or just eating!) any clumps and storing in an airtight container at room temperature.
